Do you love chicken pot pie as much as my family does? It’s comforting and filling. It’s a brilliant way to sneak vegetables into your children’s diet. Plus, I’ve found a way to make it for next to nothing. But don’t let the price scare you, my gourmet-taste husband even agrees that this is one of the tastiest versions of chicken pot pie that he’s had.

I have found 3 tricks to streamline the process that do not take away from the flavor you expect from a hearty chicken pot pie.

First, I use canned vegetable mix with potatoes! Aldi makes this canned mix for .49 cents and it is the perfect serving of vegetables to fill one pie.

Second, I use Aldi’s pre-made pie crust for $1.69. If you are a frugal superstar and always have frozen pie crust on hand, like Stephanie at SixFiguresUnder.com, then you’ll be able to save even more.

Third, I keep 1 cup portions of shredded chicken on hand. I buy 3 lb frozen chicken from Aldi and cook it in the crockpot. (The instructions and recipe is in this post.) Then, I also reserve the chicken broth at the bottom of the crockpot to use for this chicken pot pie recipe.

Ingredients:

  • 1 cup shredded chicken
  • 1 can mixed vegetables
  • 1 onion
  • 2 cups chicken broth (reserved from crockpot)
  • 1/4 cup flour
  • 2 TBSP olive oil (or butter)
  • 2 pie crusts
  • Salt and pepper to taste
  • Optional: 1/2 tsp. garlic powder, 1 tsp. Poultry seasoning or Italian seasoning (If you use the reserved chicken broth from the crockpot shredded chicken recipe, the broth will already be seasoned. You won’t need to add anything!)

Instructions:

1. Saute 1 diced onion with 2 TSBP of olive oil over medium until the onion is cooked down. I also added in some extra diced carrots I had on hand. If you have leftover vegetables in the bottom drawer of the fridge, now is the time to add them.

2. Whisk 1/4 cup of flour with 2 cups of chicken broth. Add to the pan with the onions.

3. Add in the drained can of mixed vegetables and 1 cup of shredded chicken. Kick the heat up to a boil (medium high heat) and then bring back down to medium heat to simmer for 15 minutes. You want to give the flour time to thicken the sauce to a creamy consistency.

4. Pour the thickened mixture into a pie crust. Top with the 2nd pie crust and bake at 375 for 15-20 minutes until the crust is browned.

A cheap chicken pot pie does not equal a boring pot pie! I know that you’ll enjoy this easy pot pie as much as my family does.
